Filling a gap in the Valley
During Christmas break in 2019, Alex and his family realized that the Southern California-style food they missed from back home was hard to find in the RGV. Instead of waiting for someone else to bring it to the area, they decided to create it themselves.
They opened their own food truck and introduced the concept through Alex's social media. The response was immediate. A simple announcement about something new in the Valley helped Baja Fish Tacos take off.

A year by the water
One of Alex's favorite chapters came in 2023, when Baja Fish Tacos was invited to operate at South Padre Island. The food truck spent a year there, bringing its seafood-driven menu to an island audience.
For Alex, the experience became a highlight of the business so far and another sign that the concept could travel beyond its original McAllen home.
Building toward a permanent home
The next goal is a brick-and-mortar restaurant. A permanent location would let customers enjoy the food rain or shine and give the business room to keep growing beyond the limits of a food truck.
That ambition is grounded in a practical purpose: making the Baja Fish Tacos experience easier to find and more dependable for the people who already support it.
